Introducing our Raw Australian Honey Walnut Cookies, a macaroon-textured delight with a crispy exterior and a soft, gooey center bursting with the rich flavors of organic Ironbark honey and walnuts. Crafted by our friend Hoda Alzubaidi with just four simple ingredients, these gluten-free treats are a must-try.
The Ingredients:
- 300g ground walnuts
- 1 tablespoon honey
- 1/2 cup sugar
- 3 egg whites
The Method:
- Ground the walnuts in a food processor for a few seconds until fine.
- Add the honey and egg whites and mix well with a spatula then add the sugar.
- Place the mixture in the freezer for 30 minutes to firm.
- Make 11-12 round cookies and place them into a bowl with powdered sugar. Lay them into a lined baking tray and top with 1 walnut and bake at 180°C for 10-15 minutes.
