Hoda's Honey Walnut Cookies

Introducing our Raw Australian Honey Walnut Cookies, a macaroon-textured delight with a crispy exterior and a soft, gooey center bursting with the rich flavors of organic Ironbark honey and walnuts. Crafted by our friend Hoda Alzubaidi with just four simple ingredients, these gluten-free treats are a must-try.

The Ingredients:

  • 300g ground walnuts
  • 1 tablespoon honey
  • 1/2 cup sugar
  • 3 egg whites

The Method:

  1. Ground the walnuts in a food processor for a few seconds until fine.
  2. Add the honey and egg whites and mix well with a spatula then add the sugar.
  3. Place the mixture in the freezer for 30 minutes to firm.
  4. Make 11-12 round cookies and place them into a bowl with powdered sugar. Lay them into a lined baking tray and top with 1 walnut and bake at 180°C for 10-15 minutes.
