Ready in just 10 minutes , and gluten free. These cookies are bursting with pistachio flavour & the mellow sweetness of natural raw organic honey. They're soft and chewy in the middle & crispy on the outside. They are the perfect crowd-pleasing snack.

Ingredients
• 5 egg whites
• 4 1/2 cups almond meal or almond flour
• 1 cup Wild Nectar Honey
• 2 teaspoons baking powder
• 3 tablespoons pistachio paste
• 1 cup powdered sugar to coat
Method
- Whisk the egg whites to stiff peaks (about 10 minutes by hand, or a few minutes in a mixer.)
- Pour in almond meal, honey, baking powder, pistachio pastes and a pinch of salt. Fold through until just combined. Don't over-mix.
- Scoop 20 cookies and roll them in powdered sugar. Bake for 8 minutes at 170C.
