Justine's Honey Joys

Crunchy and golden, these cornflake clusters are bound together with a warm, buttery pool of Wild Nectar honey, turning into little sticky-sweet nests as they bake. Pile them into party bowls for the school fete, tuck one into lunchboxes, or serve alongside afternoon tea with a pot of something hot.

Time: 30 minutes  

Makes: 12

 

Ingredients:

4½ cups cornflakes

90g butter

3 tbsp Wild Nectar honey

⅓ cup caster sugar


To Serve

Sprinkles, to decorate

 

Method:

Preheat oven to 150°C and line a 12-hole muffin tray with paper patty cases.

 

Place the butter, Wild Nectar honey and sugar in a saucepan over low heat. Stir until melted and glossy. Remove from the heat and add the cornflakes; gently fold until evenly coated.

 

Spoon into the patty cases. Bake for 10–15 minutes or until golden and caramelised. Garnish with sprinkles while still warm.

 

Allow them to cool completely so they crisp up.
