Bees Knees

Bees knees by name and bees knees by taste .. This classic cocktail has a delicate and zesty flavour, with the lemon juice beautifully balanced by the raw honey. Perfect for a summer aperetivo, it’s equal parts refreshing and satisfying. Said to be invented by Paris Ritz head bartender Frank Meier in 1921 or "The Unsinkable Molly Brown", an American socialite who survived the sinking of the Titanic in 1912, it remains a mysterious story and a longstanding favourite! 
The ingredients:
  • 2 tsp Wild Nectar honey 
  • 50ml dry gin 
  • 25ml lemon juice 
  • Ice 
  • Twist of lemon zest to serve

The magic:

  1. Spoon the honey into a small jug and add 1 tsp warm water. Stir until the honey is melted into the water. 
  2. Pour the honey mixture into a cocktail shaker along with the gin, lemon juice and a large handful of ice, then shake. 
  3. Double strain into a cocktail glass and garnish with a twist!
