On the day celebrating love, surprise your honey with our delicious choc-honey pecan pie!
The Ingredients:
Pastry:
- 60g plain flour (plus extra for dusting) + 60g white sugar
- 150g unsalted butter (chilled and cut into pieces)
- 1 egg yolk
- 40g cold water
- Or a good quality store bought pastry
Filling:
- 300g dark chocolate chips
- 300g pecan halves
- 80g unsalted butter (cut into pieces)
- 80g white sugar + 80g brown sugar
- 60g Wild Nectar pure or organic honey (plus extra for brushing)
- 3 eggs + 3 egg yolks
- 1tsp natural vanilla extract
- Thickened cream or ice cream to serve
The Magic:
Pastry:
- Place flour, sugar, butter, egg yolk and water into a blender and mix together until breadcrumb-type consistency. Lightly flour your work surface and shape into a ball, before wrapping in plastic wrap and keeping in the fridge for 30 mins. Roll into a thin circle (5mm thick), place back in the fridge for 10 mins, then cook in a preheated oven (180 degrees) for 10 mins.
- Place 130g of pecans to the side. Blend the remaining 170g for 5 secs and then put aside after mixing with the choc chips. Melt butter and mix in sugars, Wild Nectar Honey, eggs, egg yolks and vanilla. Pour blended pecans and choc chips onto the base of the pie, and pour mixture on top. Decorate with the 130g of pecans and bake for 30 mins (or until golden brown).
- Brush the pie with Wild Nectar Honey, and serve with cream or ice cream.
