Hoda's Baklava Pistachio Loaf

The Ingredients;

  • 3 eggs
  • 1 cup sugar
  • 160g butter melted
  • 1/4 cup honey @Wild.nectar.honey
  • 4 tablespoon pistachio paste
  • 1/4 cup yoghurt
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon 
  • 1 cup honey to glaze
  • 1 cup slivered pistachio to glaze

The Method;

  1. Whisk the eggs, butter, sugar, honey, pistachio paste, and yoghurt together
  2. Add the flour, baking powder and cinnamon and whisk until just combined. Do not over mix
  3. Bake at 175C for 45-50 minutes. Once baked, allow to cool for 5 minutes then poke holes on top of the cake using a skewer.
  4. Pour honey on top of the cake and allow it to soak through the holes. Top it with pistachio and allow it to soak in for 4-6 hours or overnight.
  5. Enjoy at room temperature!
