Hoda's Orange & Coconut Honey Cake

The Ingredients:

Cake

2 oranges

1/2 cup Wild Nectar Honey

4 eggs

1 1/2 cups sugar

180g cooled melted butter

1 teaspoon vanilla extract

2 cups plain flour

1 cup desiccated coconut

1 teaspoon baking powder

1/2 teaspoon baking soda

Syrup

2 cups sugar

2 cups water

2 tablespoons honey

Orange peel

1 cinnamon quill

The Method:

1. Prepare the Syrup:

Combine all syrup ingredients (sugar, water, honey, orange peel, and cinnamon) in a small pot. Bring to a boil and let it simmer for 15 minutes. Once done, set aside to cool completely.

2. Prepare the Orange Puree:

In a deep pot, boil the oranges in water for 15 minutes. Once soft, roughly chop the oranges and blend them while hot with honey until they reach a fine puree consistency.

3. Make the Cake Batter:

In a large bowl, whisk together the eggs and vanilla for 5 minutes until they double in volume. Gradually add the sugar, followed by the cooled melted butter. Fold in the orange and honey puree. Once combined, add the remaining cake ingredients and mix until smooth.

4. Bake:

Pour the batter into a deep baking dish (34cm x 24cm recommended). Bake at 170°C for 40 minutes, or until golden and a skewer inserted comes out clean.

5. Soak the Cake:

While the cake is still hot, pour the cooled syrup evenly over the surface. Sprinkle additional desiccated coconut on top, then place it in the fridge to soak for at least 4 hours or overnight for the best flavor.
